Reports to: ExecutivePerformance Chef - Player Development
Status: Full Time
Location: Phoenix, AZ
Pay: $23/hr
Position Summary: To maximize player performance potential, the Sous Chef, will work within the Giants Sports Medicine Department. The position will report directly to the ExecutivePerformance Chef - Player Development and the Executive Sous Chef. The Sous Chef will work under the direction and collaboration of the Executive Performance Chef and Performance Nutrition team. Within the team, they will stay abreast on sports nutrition research, culinary experience, nutrition guidelines and sports science data to drive a PERFORMANCE FOOD SERVICE PROGRAM tailored specifically to the needs of the San Francisco Giants Minor League Players and Staff. Input and culinary creativity from the chefs and input from the Performance Dietitians will be utilized regularly to determine team menus, food and beverage items to maximize player’s nutritional intake during the season for the benefits of performance, recovery, and injury prevention.
Assists the Executive Chef with the day-to-day culinary operations in the performance kitchen. Responsible for the majority of the day to day operation of the performance kitchen. This position oversees and assists with cookery while making sure that all proper food safety protocols are followed. Duties can include assisting the Exec. Chef or Exec. Sous Chef with the management and training of new personnel, scheduling staff work hours, overseeing storage, stocking, and sanitation procedures. They can also assist with menu creation, food purchasing, and the maintenance of quality standards as delegated by the Exec. Chef and Exec. Sous Chef.
Position Responsibilities:
- Ensure proper health and performance of all San Francisco Giants players, coaches, training staff, and clubhouse employees
- Provide food/beverages of the highest nutritional value possible at all times.
- Maintaining all nutritional guidelines for the team, and associated staff.
- Assist with recipe development including proper nutrition into every dish
- Work with Performance Dietitians to develop proper guidelines, and execute them. (Meal placement, meal timing, menu review.)
- The ability to execute meal preparation specific to dietary needs as guided by the Performance Dietitian and other medical staff.
- Assist with ordering and provide locally sourced and highest quality food within the annual budget
- Assisting with continued menu development to expand variety to please all team staff.
- Assist with management, payment, and maintenance of the annual season, off-season and camp food budget
- Continue to develop future growth in team performance with performance dining program
- Maintain and follow all local Health Department food preparation codes and regulations.
- Works with the Chef to hire, train, supervise, schedule and participate in activities of chefs, cooks, and associates involved in preparing, cooking and presenting food.
- Assist with audit of food storeroom items and storage to maintain consistent quality products using FIFO (first in, first out) and ensure adherence to all health code requirements.
- Ensure back of house area adheres to the highest standards of cleanliness, presentation, and service.
- Maintain appropriate levels of necessary dishes and utensils; keep all dishware used in cooking and serving clean and sanitary at all times.
- Monitor equipment operation, perform preventative maintenance, troubleshoot breakdowns, maintain supplies, and call for repairs as necessary.
- Ensure compliance with all food-handling and sanitation regulation.
- Take the most effective role.
Abilities/Skills:
- Ensure all tasks are performed efficiently and within food safety guidelines
- Must be well versed in all ethnicities of cuisine
- Have knowledge of proper kitchen procedures
- Stay up to date on current performance based culinary trends
- Must be able to coincide with performance departments requests to maximize performance using high end techniques
- Holds self-accountable for the highest standards of service and food production.

Availability:
- This is a year-round position with possibility of work occurring during holidays, weekends, non-traditional schedule
Knowledge and Skills Required:
- Minimum of 1+ years experience as a chef. Experience working with sports teams is preferred.
- Previous experience as Sous Chef or managerial role preferred
- Graduate of a culinary institute or similar education/background. Nutrition Certification a plus.
- Knowledgeable in culinary terms, knife skills and safe food handling.
- Understands and complies with food safety and temperature standards.
- Food Service Manager’s certification required according to local and state law.
- Able to work non-traditional hours and remain flexible regarding work schedule.
- Ability to handle confidential matters and information with discretion and diplomacy
- Excellent communication skills, both written and verbal
- Must be able to stand for long periods of time
- Must be able to lift up to 25+ lbs.
- Pass a background check.
