The Culinary Team at the JUSTIN Estate is looking for a passionate Sous Chef, who is determined to build off our recent successes and continue to strive for further recognition.

The Sous Chef is responsible for supporting the Executive Sous Chef in developing and executing the winery’s dining program, including special events, downtown, the chef garden, and other culinary-based programs. Ensures all recipes, food preparations, and presentations meet the restaurant’s specifications and commitment to quality. Maintains a safe, orderly, and sanitized kitchen. Demonstrates this by example, using proper food-handling techniques. Manages line-level staff within the above-mentioned kitchens.

• The Sous Chef's primary role is to oversee the preparation, cooking, and presentation while maintaining a safe, clean and orderly kitchen
• Assist with daily kitchen prep work and station set-up prior to service and maintaining the highest quality food preparation standards
• Duties associated with this role: preparing, cooking, and presenting culinary dishes; enforcing strict health and hygiene standards in the kitchen; and trouble-shooting any problems that may arise
• Ensures food is prepared properly and meets JUSTIN Standards (and meets health department)
• Controls cost, efficiency, inventory & places orders with Exec Chef and or vendors
• Responsible for assisting the Executive Chef & Executive Sous Chef in executing banquet and catering events
• Collaborates with Chef and Chef de Cuisine to create seasonal appropriate dishes
• Works closely with Tasting Room Manager and Hospitality to build and maintain a cohesive program between the front and back of the house
• Assists with training staff in their department
• Proactively selects seasonal plantings for the garden based on the Restaurant menu
• Maintains the JUSTIN garden and harvests vegetables & fruits for use in the kitchen and communicates what is available in the garden and what will be ready soon to the culinary team

• 2+ Years Fine Dining Culinary Experience
• 1+ years management experience
• Serv-Safe Certified
• College or culinary training or extensive cooking and production experience
• Knowledge of kitchen training techniques
• Awareness of local, state and federal health and sanitation requirements
• Experience with food ordering and procurement
• Demonstrated strong ability to work well under pressure
• Basic computer skills and ability
• Understanding of proper use of kitchen equipment, such as stoves, refrigeration, slicers and knives
• COVID vaccination will be required for this position unless candidate has a legally valid exemption.

Pay Range: $65,000 - $75,000, and may include relocation assistance for the right candidate. Final compensation will be dependent upon skills & experience.
