Stewarding Managers are responsible for the oversight and daily management of the Dishwashing and Receiving teams in multiple restaurant locations, including but not limited to staff supervision; maintenance and inventory of equipment; and ensuring cleanliness and sanitation of all back of house areas. Also expedites dish room operations within the division; trains, supervises and develops employees on divisional dish and receiving teams; and supports the teams regarding recruitment and hiring for the dish and receiving teams.
Essential Functions
- Oversee, manage and expedite dish room operations in multiple restaurant locations within the division, including but not limited to staff supervision; maintenance and inventory of equipment; and ensuring cleanliness and sanitation of all back of house areas
- Train, supervise and develop employees on dish/ receiving teams at multiple locations within the division
- Work with fellow management to establish par levels for the number of dishwashers needed per shift according to business levels
- Become knowledge expert and resource for all functions related to dishwashing and receiving and respond to questions about the dish room/ receiving tasks and responsibilities
- Provide recommendations and scheduling support to the Executive Chef regarding recruitment, selection and hiring processes of dish/receiving team employees
- Monitor and address individual employee performance through recognition, coaching and, when necessary, disciplinary action
- Attend all appropriate meetings and advocate for team
- Prepare work assignments and delegate to staff
- Order and monitor inventory of all chemicals and supplies needed for dish
- Perform general inventory of china, glass and silverware
- Proficiently perform functions listed in job descriptions of direct reports and their teams
- Partner with GM and management team to interview, hire, onboard, train, schedule, supervise and develop BOH hourly employees
- Monitor, address and document individual employee performance through on-going feedback, positive recognition, formal performance reviews, coaching and, when necessary, disciplinary action up to and including employment termination
- Monitor and ensure the restaurant and the team’s compliance with all Company and restaurant policies and procedures as well as all legal and regulatory requirements (including but not limited to safety and sanitation regulations) and represent the restaurant and Company in interactions with legal and regulatory authorities
- Work a variety of days and shifts (including early mornings, late nights and weekends) at multiple sites with or without overnight travel as needed
- Safely and effectively use and operate all necessary tools, utensils, equipment and software (for example, restaurant management software, knives, etc.)
- Effectively communicate in order to perform and follow job requirements in written and spoken direction
- Multitask calmly and effectively in a busy, stressful environment
- Work in a confined, crowded space of variable light, noise and temperature level
- Move and lift up to 10 pounds, frequently move and/or lift up to 25 pounds, occasionally move and/or lift up to 50 pounds
- Stand and walk for an entire shift and move safely through all areas of the restaurant, which may include stairs, uneven or slick surfaces

- Use tact and good judgment when dealing with challenges pertaining to guests, vendors and employees, and respond with patience and courtesy
- Proficiently use and operate all necessary tools (including but not limited to knives) and equipmen
- Follow all rules, policies, procedures and conditions of employment, including those outlined in the Employee Handbook
- Other duties assigned as needed
