Flagship Restaurant Group is currently looking for a Chef de Cuisine to join our team in our newest concept, Memoir, opening soon in The Mercantile district of Omaha’s Old Market.
The Chef de Cuisine, working directly with the Executive Chef, is responsible for managing daily BOH operations while striving to create a comfortable and professional atmosphere for employees and exceptional experiences for our guests through outstanding teamwork.
Compensation + Benefits:
$60,000-$70,000 annual salary, depending on experience

An Ideal Candidate:
· Has an extensive knowledge in culinary arts and a strong passion for epicurean excellence, with sushi experience a plus.
· Possesses self-discipline, initiative, and has a proven ability to lead and develop teams.
· Has an advanced understanding of business operations, scheduling, financials, food costs, and inventory control systems.
· Performs calmly and effectively and must be able to handle the pressures of a fast-paced work environment, while always maintaining food safety and sanitation standards.
· Has excellent communication and problem-solving skills.
Qualifications:
· Minimum of 3-5 years of high-volume culinary management experience.
- Culinary school education is preferred, but a combination of practical experience and education will be considered as an alternative.
- Knowledge of computer programs like Microsoft Word, Excel, Outlook, and familiarity with restaurant management software. Proficiency in Compeat Advantage is desirable.
- Proficient in the following dimensions of restaurant functions: food planning and preparation, purchasing, sanitation, company policies and procedures, personnel management, recordkeeping, and preparation of reports.
- Must possess a valid driver’s license, be eligible to work in the United States and agree to background check, upon request.
Applicants must have open availability, including nights and weekends. While preparing for our opening and the several months that follow, you may be asked to work longer hours than usual. The typical work week is 50-55 hours and schedule/hours may vary if Chef de Cuisine must fill in for employees or if emergencies arise.
Overview of Responsibilities and Duties:
· Ensure consistent and high-quality food preparation and service, maintaining food safety and sanitation standards.
· Manage food and beverage costs by monitoring inventory and controlling portion sizes to minimize waste.
· Coordinate with the Director of Operations for efficient supply procurement and scheduling of deliveries.
· Supervise a team of 10+ employees, providing direction, feedback, and training.
· Adhere to company standards and service levels to optimize sales and minimize costs.
· Handle administrative duties related to finance, personnel, and payroll in accordance with company policies.
· Keep the General Manager informed of any significant issues and take appropriate corrective action.
· Foster a positive working environment and maintain a harmonious relationship with employees.
· Ensure a safe working environment for employees and guests.
