TITLE: Cook
JOB SUMMARY: Responsible for over-all preparation and service of meals (particularly dinner and lunch) served from the main kitchen during the First Cook’s shift. Orders, receives, and stores food products and kitchen supplies; cleans/sanitizes storage areas. Supervises the Second Cook and Kitchen Assistants in the absence of the Food Services Supervisor. Reports to the Food Services Supervisor. This position is non-exempt.
DUTIES AND RESPONSIBILITIES:
1. Checks the menu at least two days in advance of each meal in order to pull frozen items for thawing in advance of the meal.
2. Checks production sheets for exact details on amounts, servings, nutritional requirements.
3. Uses standardized recipes (when available) to prepare meals.
4. Gathers all supplies necessary for meal production.
5. Prepares to specification all items necessary for the meal being served.
6. Serves appetizing, palate-pleasing meals family or buffet-style, on time and at appropriate temperatures.
7. Supervises and assist in the general sanitation of the Food Services areas, and in the standard clean-up following meals.
8. Supervises kitchen assistants (including residents) who are helping with the meal.
9. Opens and closes Food Services areas at the beginning or end of the work day as necessary.
10. Fills requisitions turned in by units and departments in a timely and efficient manner.
11. Supervises and expedite special functions as planned by the Food Services Director.
12. Assists the Food Services Director with weekly and monthly inventories.
13. Is attentive to the dietary needs of the residents and/or staff, and provide for the needs of residents on special diets or with food allergies and restrictions, as specified on the production sheets.
14. Supervises or operates the ware-washing operation and clean production-related equipment, when required.
15. Produces all in-house baked goods, including decorated cakes for residents’ birthdays, according to specified procedures and menu needs.
16. Orders all fresh produce and ice cream, according to specified procedures and need.
17. Receives all incoming food goods and supplies, and store them according to specified procedures.
18. Cleans, organizes and sanitizes all storage areas, refrigerated and otherwise, according to specified procedures and need.
19. Displays exemplary role modeling on the job and when in contact with the children being served.
20. Fulfills all other duties as assigned by the Food Services Director.
EDUCATION AND EXPERIENCE:
A high school diploma and at least four years experience as a cook, preferably in a residential setting are required. Flexibility in scheduling and the ability to work as a team member in a sometimes very busy environment are requisite.
