POSITION OBJECTIVES:

The position is responsible for all culinary production, working in a fast-paced environment while ensuring all member and their guests dining needs are met in a professional and timely manner.

ESSENTIAL JOB FUNCTIONS

• Executing menu items from start to finish including preparation of ingredients, butchery of proteins, cooking and plating of menu items.
• Maintaining cleanliness of any BOH work areas, including and not limited to refrigeration, cooking equipment, and prep areas.
• ensure work station Mise en Place is completed to standard
• Prepares, seasons and cooks meats and vegetables using skill in grilling and sautéing.
• Prepares, seasons and cooks starches, vegetables and other side hot food items.
• Performs food preparation work for cooking, including seasoning.
• Measures and mixes ingredients according to recipe.
• grills and sautéed meats, fish, vegetables and other foods. Observes and tests foods being cooked by tasting, smelling and piercing.
• Portions food on serving plates.
• Responsible for following food safety and physical safety policies at all times, while utilizing personal protective equipment (PPE) required by management.

• Participates in regular safety meetings, safety training and hazard assessments.
• Attends training programs (classroom and virtual) as designated.
